To reduce acidity in wine with potassium bicarbonate, first measure the total acidity. Then, dissolve 3.4 grams of potassium bicarbonate in a small amount of wine and add it to the total volume. Stir gently and allow several weeks for potassium bitartrate to precipitate out. Cold stabilize the wine before racking to remove the solids.
